To prevent sticking, simply wipe the inside of the bread basket with a damp cloth, lightly spray with water, and dust with a mixture of rice flour and regular flour. Alternatively, you can use the washable linen cloth that comes with the basket. Using the banneton is simple - dust the inside with flour, place the dough inside, cover with a cloth, let it rise in a warm environment, then transfer to a baking tray when ready to bake.

To care for your banneton, avoid putting it in the microwave or near open flames. Clean with a damp cloth and allow it to air dry. After at least 3 uses, a protective film will form to aid in releasing the dough more easily. The banneton is great for rising dough and shaping loaves while wicking moisture from the crust, but it is not suitable for baking.

For best results, condition your banneton before first use by misting with water and dusting with flour. For a crispy crust, sprinkle or brush water on the bread before baking. When cleaning, soak the banneton in cold water, scrub gently, and never use soap. In case of mold, bake the banneton briefly to kill bacteria.
